Paleo Pumpkin Porridge

Autumn is here! Mornings are chilly and winter squashes and pumpkins are popping up at the farmer's markets. I've been on a smoothie kick most of the summer, but as soon as the weather changes, I find them much less appealing. Instead, I crave something warm and comforting to break my fast....and this porridge really hits the spot!

Oatmeal is my go-to brekkie in Fall / Winter so I wanted to create the same effect without the grains, just to mix it up and give a shout-out to all my Paleo peeps who aren't down with oats. Not only is this porridge totally delicious and satisfying, it's also a breeze to make! I'd argue it's even easier than oatmeal...especially if you're the type that soaks your oats overnight. This recipe takes zero foresight which is perfect for people who aren't into meal planning! 

It contains a combination of complex carbohydrates, protein and healthy fats to balance your blood sugar and keep you full and energized all morning. After having this for breakfast, I can go a solid five hours without feeling the slightest pang of hunger. Love that.

Ok so now that I've built it up enough... Here's the recipe!

Paleo Pumpkin Porridge

Serves 1

Ingredients: 

  • 1/2 cup of canned pumpkin puree (can substitute butternut squash puree) 
  • 3 Tbsp hemp seeds
  • 1 Tbsp almond or cashew butter
  • 1 tsp cinnamon powder
  • sprinkle of vanilla powder and ginger powder (optional)
  • tiny pinch of sea salt
  • splash of non-dairy milk, such as coconut or almond 

Directions: 

Add everything to a shallow saucepan and turn on medium heat. Stir until all the ingredients are combined. Depending on how thin or thick you like your porridge, add more or less nut milk. As it heats, the porridge will thicken so stay around the kitchen so you can stir every minute or so. Once it gets to your desired heat and consistency (usually only takes 3-4 minutes), scoop it into a bowl, top with pumpkin seeds (for the crunch factor) and eat!
